  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ tsp salt
  • 3 tbsp cocoa powder
  • 2 tbsp maple syrup

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a small bowl, mix non-dairy milk and apple cider vinegar; let sit for 5 minutes.
  3. In a large bowl, whisk together pumpkin purée, brown sugar, and oil. Stir in the vegan buttermilk.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Divide batter; stir cocoa powder and maple syrup into one half to create chocolate batter.
  7. Alternate spoonfuls of each batter into the loaf pan and swirl together lightly.
  8. Bake for 45–50 minutes; cool before slicing.
