  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. To prepare the filling, melt vegan butter in a saucepan over low heat. Stir in chopped pecans, brown sugar, maple syrup, and vanilla until combined. Remove from heat and let cool slightly.
  2. For the cookie dough, cream together room temperature vegan butter and sugars until fluffy. Add flax egg and vanilla; mix until smooth.
  3. In a separate bowl, whisk flour, cinnamon, baking powder, and salt together. Gradually add this mixture to the wet ingredients until fully combined.
  4. Preheat the oven to 350°F (175°C). Scoop cookie dough onto lined baking sheets and create an indentation with your thumb in each cookie. Fill with the prepared pecan mixture.
  5. Bake for about 12-15 minutes until edges are golden. Cool on the baking sheet before transferring to wire racks.
