  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/4 cup chopped pecan halves
  • 2 Tablespoons pastry flour
  • 1 Tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup pastry flour
  • 1 Tablespoon ground cinnamon
  • 3 Tablespoons melted vegan butter
  • 1/4 teaspoon maple extract
  • 1/2 cup chopped pecan halves

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Prepare the cinnamon sugar swirl by mixing brown sugar, white sugar, chopped pecans, pastry flour, and ground cinnamon in a bowl.
  3. For the streusel topping, combine brown sugar, pastry flour, ground cinnamon, melted vegan butter, maple extract, and chopped pecans in another bowl until crumbly.
  4. In a large bowl, whisk together plant-based milk and apple cider vinegar; let sit for 2 minutes. Add melted vegan butter, unsweetened applesauce, white sugar, maple syrup, and maple extract; mix until smooth.
  5. Gradually whisk in pastry flour along with baking powder, baking soda, and salt until just combined.
  6. Spread 2/3 of the batter into the prepared pan. Layer with the cinnamon sugar mixture and top with remaining batter. Sprinkle streusel on top.
  7. Bake for 40-45 minutes until a toothpick comes out clean from the center. Cool for 10 minutes before transferring to a wire rack to cool completely.
