  • 1 cup warm water
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce

  • 2 tablespoons nutritional yeast (optional, for topping)

Instructions

  1. Prepare the Dough: In a bowl, mix yeast with warm water and sugar. Let foam for 5–10 minutes. Combine flour and salt in another bowl; add the yeast mixture and olive oil. Knead until smooth (8–10 minutes). Cover and let rise for 1 hour.
  2. Cook the Filling: Heat olive oil in a frying pan over medium-low heat. Add sliced onions; cook until caramelized (15–20 minutes). Stir in garlic, spinach, oregano, and optional red pepper flakes; season with salt and pepper.
  3. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish.
  4. Assemble Rolls: Roll out dough into a rectangle; spread marinara sauce on top. Add cooled filling evenly.
  5. Roll & Cut: Roll tightly from one long side into a log shape; cut into 10–12 slices. Place rolls in the greased baking dish.
  6. Bake & Serve: Optional—sprinkle nutritional yeast on top before baking for 25–30 minutes until golden brown.
