  • 1 tablespoon chili powder
  • 1 teaspoon cumin

Instructions

  1. Prepare all vegetables by washing and peeling them as necessary. Dice the sweet potatoes, chop the onion, mince the garlic, and dice the bell pepper.
  2. In a large pot or Dutch oven over medium heat, add a splash of vegetable broth to prevent sticking. Sauté onions and garlic until translucent (about 3-5 minutes), then stir in the sweet potatoes and bell pepper.
  3. Once vegetables start to soften, pour in vegetable broth and canned diced tomatoes. Stir in drained black beans along with chili powder, cumin, salt, and pepper.
