1 medium sweet potato
1 cup cooked ground turkey or beef
1 tsp olive oil
1 avocado
1 cup cottage cheese
1 tsp smoked paprika
Salt & pepper to taste
Red pepper flakes
Instructions
Preheat the oven to 400°F (200°C). Toss cubed sweet potatoes in olive oil, smoked paprika, salt, and pepper. Spread evenly on a baking sheet and roast for about 25 minutes until golden.
In a skillet over medium heat, cook the seasoned ground turkey or beef in olive oil or butter for approximately 6-8 minutes until fully cooked.
While the sweet potatoes roast and meat cooks, slice the avocado and season with salt, pepper, and red pepper flakes.
In your serving bowl, layer cottage cheese at the bottom. Top with roasted sweet potatoes, then ground meat and finally sliced avocado. Drizzle with hot sauce if desired.
