  • 2 cups apple slices (about 1/4-inch thick)
  • 1/3 cup chopped shallots (or yellow onion)
  • 1/3 cup apple cider
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt, divided
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon light or dark brown sugar

Instructions

  1. Heat a large skillet over medium heat.
  2. In a small bowl, combine the spices and sprinkle over both sides of the chicken thighs.
  3. Add oil to the skillet and cook the chicken for about 5 minutes on each side until fully cooked (165°F internal temperature). Remove from skillet.
  4. In the same skillet, melt butter and stir in brown sugar, apples, shallots, and remaining salt. Cook until apples soften (about 5 minutes).
  5. Pour in apple cider; simmer until slightly thickened (another 5 minutes).
  6. Return chicken to the skillet; cook for an additional 2 minutes.
  7. Serve hot, spooning the apple mixture over the chicken.
