  • ½ small white onion (diced)
  • 3 cloves garlic (minced)
  • 1 pound mild Italian sausage (substituted with chicken or turkey sausage)
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup cream cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¼ cup parmesan cheese

Instructions

  1. In a large pan over medium heat, add olive oil and sauté diced onions until soft.
  2. Stir in minced garlic for one minute until fragrant.
  3. Add mild Italian sausage, breaking it apart as you cook until no longer pink.
  4. Mix in tomato paste, diced tomatoes, Italian seasoning, salt, pepper, cream cheese, and chicken broth.
  5. Pour in heavy cream and stir until well combined.
  6. Cover and simmer on low heat for 5 minutes to meld flavors.
  7. Serve garnished with fresh parsley and extra Parmesan if desired.
