  • 2 cups granulated sugar
  • 2 cups cake flour

  • 10 ounces frozen raspberries (thawed)
  • 2 cups powdered sugar
  • 2 cups desiccated coconut

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased or parchment-lined baking pan.
  2. In a mixing bowl, beat together eggs, milk, melted butter, and vanilla until combined.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until smooth.
  4. Pour batter into the prepared pan and bake for 35–40 minutes until a toothpick comes out clean. Cool completely on a wire rack.
  5. Prepare the raspberry glaze by simmering water and sugar until dissolved; add thawed raspberries and strain if desired. Mix in vegan gelatin powder until dissolved.
  6. Cut cooled cake into squares, dip in raspberry glaze, then roll each piece in coconut.
