  • 2 teaspoons coconut oil (optional)
  • 1/2 cup creamy peanut butter
  • 1/4 cup canned pumpkin puree
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Line a mini muffin pan with paper liners.
  2. In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring until smooth.
  3. Spoon about 1 teaspoon of melted chocolate into each liner and freeze for 5 minutes until set.
  4. In another bowl, combine peanut butter, pumpkin puree, powdered sugar, pumpkin pie spice, and salt; stir until smooth.
  5. Add a heaping teaspoon of the filling on top of each chocolate layer and flatten gently.
  6. Cover with remaining melted chocolate and freeze for 15–20 minutes until firm.
  7. Store in the refrigerator until ready to serve.
