  • 2 cups milk (whole or 2%)
  • 1 cup pumpkin puree
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika (optional)
  • 1/4 tsp ground nutmeg
  • Salt and pepper, to taste
  • 1 ½ cups shredded sharp cheddar cheese
  • 1/2 cup shredded Gruyère or mozzarella (optional for extra creaminess)
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (optional topping)
  • 1 tbsp melted butter (if using breadcrumbs)

Instructions

  1. Cook the pasta in boiling salted water until al dente; drain.
  2. In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk and stir until thickened.
  3. Mix in pumpkin puree, Dijon mustard, smoked paprika, nutmeg, salt, and pepper; simmer for 2 minutes.
  4. Remove from heat and add cheeses until melted and creamy.
  5. Combine sauce with drained pasta; transfer to a greased baking dish if desired.
  6. For an extra crispy top, sprinkle breadcrumbs mixed with melted butter over the mac and cheese and bake at 375°F for 15-20 minutes.
