  • 6 slices turkey (diced)
  • 1 large onion (diced)
  • 2 lbs yellow flesh potatoes (peeled and cubed)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 1 egg (beaten)

Instructions

  1. For the crust: Mix flour and salt in a bowl, add diced butter, and blend until crumbly. Gradually add ice water to form dough. Chill for at least 30 minutes.
  2. For the filling: In a skillet over medium heat, cook turkey until crispy, then sauté onions until translucent. Add potatoes, cream, flour, salt, and pepper; cook until potatoes are tender. Stir in bacon and cheese.
  3. Assemble: Preheat oven to 375°F (190°C). Roll out half the chilled dough for the base of the pie. Fill with potato mixture and top with another rolled crust. Seal edges.
  4. Bake: Brush top with beaten egg and cut slits for steam to escape. Bake for 45–50 minutes until golden brown.
