  • 1 cup packed brown sugar
  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray two 12-cup muffin tins with non-stick cooking spray.
  3. In a mixing bowl, combine flour and brown sugar. Cut in cold butter until crumbly, then press into the bottom of each muffin cup.
  4. In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until blended. Stir in chopped pecans.
  5. Pour filling over crusts in muffin tins until just full.
  6. Bake for about 40 minutes until filling is set and slightly puffed.
  7. Let cool for 10 minutes before transferring to a wire rack.
