  • 1, 14oz package extra firm tofu
  • Avocado oil
  • 1 large shallot, minced
  • 1 jalapeño, minced
  • Kosher salt
  • 4 scallions, thinly sliced (white and green portions separated)
  • 1 tbsp tamari
  • 23 tbsp plant-based mayo
  • 1 tsp dijon mustard
  • 1 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Juice of 1/2 a lemon
  • 1 small zucchini
  • 3 tbsp minced chives
  • 3 tbsp minced parsley
  • 3/4 cup panko bread crumbs (plus 1/3 cup extra for breading, optional)
  • 1/2 cup unsweetened plant-based yogurt
  • 2 tbsp plant-based mayo
  • 3 tbsp vegan kimchi plus 1 tbsp of the kimchi juice
  • Juice of 1/2 a lemon
  • 2 tsp maple syrup

Instructions

  1. Press the tofu gently to remove excess moisture. Wrap in a clean dish towel and set aside.
  2. Sauté shallot and jalapeño in a skillet with oil until softened, then add scallions and cook briefly.
  3. Crumble tofu into the pan, mix well, and cook until heated through. Let cool.
  4. Grate zucchini and squeeze out excess liquid.
  5. In a bowl, combine mayo, mustard, seasoning, lemon zest/juice, tofu mixture, zucchini, herbs, and panko until well mixed.
  6. Form mixture into patties; optionally coat with extra panko.
  7. Pan-sear on both sides until golden brown.
  8. Blend ingredients for creamy kimchi mayo until smooth.
