  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper to taste
  • Fresh chopped parsley (for garnish)
  • 1 cup cooked jasmine or basmati rice
  • 1 medium avocado, sliced
  • 1 cup roasted sweet potato wedges
  • 1 cup diced cherry tomatoes
  • 1 avocado, diced
  • 1 tbsp finely diced red onion
  • 1 tbsp chopped cilantro
  • Squeeze of lime juice
  • Salt to taste

Instructions

  1. Marinate chicken tenders in olive oil, garlic powder, smoked paprika, salt, and pepper for 10-15 minutes.
  2. Grill marinated chicken over medium-high heat for 3-4 minutes per side until cooked through.
  3. Preheat oven to 400°F (200°C). Toss sweet potato wedges with olive oil and seasonings; roast for 20-25 minutes until crispy.
  4. In a bowl, combine diced tomatoes, avocado, red onion, cilantro, lime juice, and salt to create salsa.
  5. Assemble your bowl by layering rice at the bottom and topping with grilled chicken, roasted sweet potatoes, fresh salsa, and sliced avocado.
