  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • Fresh Parsley (chopped)
  • 1 tbsp Flour + 3 tbsp water (for béchamel)
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté the thinly sliced onions for 30–40 minutes, stirring occasionally until golden brown. If needed, add sugar to enhance caramelization.
  2. Pour in the beef broth if onions stick; simmer for an additional 10 minutes.
  3. In the same skillet, whisk flour into melted butter over low heat, gradually adding heavy cream until thickened.
  4. Mix two-thirds of the caramelized onions with the béchamel sauce and season with salt, pepper, parsley, and Parmesan cheese.
  5. Cook cavatappi macaroni in salted water until just under al dente; drain.
  6. Combine cooked pasta with the sauce and transfer to a baking dish. Top with remaining onions and breadcrumbs if desired.
  7. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
