  • 1 tablespoon olive oil
  • 8 oz bow tie pasta
  • 1 cup pumpkin seeds (toasted)
  • 8 oz baby spinach
  • ½ cup dried cranberries
  • 4 oz goat cheese (crumbled)
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • ¼ cup maple syrup
  • juice of 1 small lime

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  2. Cook bow tie pasta in salted boiling water until al dente. Drain and cool slightly.
  3. In a bowl, whisk together olive oil, Dijon mustard, maple syrup, and lime juice for the dressing.
  4. In a large bowl, combine roasted squash, pasta, pumpkin seeds, spinach, cranberries, and goat cheese. Drizzle with dressing and toss gently.
  5. Serve immediately or chill for up to an hour before serving.
