  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small sliced onion
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 1/4 cup low-sodium chicken stock
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix together soy sauces, vegetarian stir fry sauce, sesame oil, chicken stock, and cornstarch; set aside.
  2. Bring a large pan of water to boil over medium-high heat. Blanch the chow mein noodles for 20-30 seconds until loosened; strain and set aside.
  3. In the same large pan, heat vegetable oil over medium heat. Sauté onions, cabbage, and celery for about one minute until softened.
  4. Push the vegetables to one side of the pan and add the blanched noodles along with the prepared sauce to the empty space.
  5. Toss everything together until well combined and heated through; serve immediately.
