  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Add the egg and vanilla, mixing well.
  3. Gradually incorporate flour, salt, and baking powder until just combined.
  4. Scoop out cookie dough balls onto the prepared baking sheet and flatten slightly. Create an indentation in the center of each cookie.
  5. For the filling, melt the remaining butter and mix it with brown sugar, pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt until well combined. Spoon this mixture into the center of each cookie.
  6. Bake for 8-9 minutes until lightly golden. Allow cooling before serving.
