  • 1 pound lump crab meat
  • Juice of 1/2 lemon

  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup grated Gruyere cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup grated sharp cheddar cheese
  • 1/4 cup chopped fresh parsley, for garnish
  • 2 tablespoons breadcrumbs (optional)

Instructions

  1. Cook the pasta according to package directions until al dente; drain and set aside.
  2. In a large skillet over medium heat, sauté onion in olive oil until softened. Add garlic and cook until fragrant.
  3. Gently fold in lump crab meat and lemon juice; heat through and remove from heat.
  4. In a saucepan, melt butter and whisk in flour to create a roux. Gradually add milk while whisking to prevent lumps; season with salt, pepper, and optional spices.
