  • 1/4 cup lime juice
  • 2 tbsp canola oil
  • 1 tsp jalapeno (minced)
  • 1 tsp honey
  • 1 tsp salt
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp cayenne pepper (optional)
  • 1/4 tsp ground black pepper
  • 2 tsp olive oil
  • 2 tbsp red onion (chopped)
  • 1/2 cup frozen corn
  • 1/2 cup black beans (rinsed)
  • 1/4 tsp salt
  • pinch ground black pepper
  • soft taco flour tortillas
  • fresh cilantro (chopped)
  • avocado (chopped)
  • avocado dressing
  • lime wedges

Instructions

  1. Marinate the chicken by mixing half the lime juice with canola oil, jalapeno, honey, and spices in a Ziplock bag. Add chicken, seal, and refrigerate for at least 30 minutes.
  2. Cook the marinated chicken in a non-stick skillet over medium-high heat for approximately 5–8 minutes per side until fully cooked (internal temperature of 160°F).
  3. In the same skillet, sauté red onion in olive oil until translucent, then add frozen corn and black beans; cook until heated through.
  4. Assemble your tacos by placing sliced chicken and filling in tortillas. Top with cilantro and avocado before serving.
