Ingredients

Scale
  • 3 1/2 cups frozen cherries
  • 1/3 cup granulated sugar
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • 1/4 cup warm water
  • 1 teaspoon active dry yeast
  • 3/4 cup whole milk
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 4 1/2 cups bread flour
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 3 ounces cream cheese, room temperature
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 13 tablespoons whole milk

Instructions

  1. Prepare the cherry filling by combining frozen cherries, granulated sugar, cold water, and cornstarch in a saucepan over medium heat until thickened. Set aside to cool.
  2. Activate the yeast: mix warm water with active dry yeast and let it sit until frothy.
  3. In a mixing bowl or stand mixer, combine whole milk, sugar, eggs, flour, salt, and the yeast mixture. Mix until smooth.
  4. Gradually add softened butter while mixing until the dough is elastic.
  5. Let the dough rise in a greased bowl covered with a cloth for about 1 hour or until doubled.
  6. Roll out the risen dough into a rectangle and spread the cooled cherry filling evenly on top.
  7. Roll tightly from one edge to form a log, then cut into slices.
  8. Place in a greased baking dish and allow to rise again for 30 minutes.
  9. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  10. Prepare the frosting by whipping together cream cheese and butter, then adding powdered sugar and vanilla extract.
