  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) red enchilada sauce
  • 2 cups low-sodium chicken or beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • Optional toppings: sour cream, sliced jalapeños, chopped cilantro, crushed tortilla chips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground beef or turkey and cook until browned.
  2. Stir in diced onion and minced garlic; sauté until fragrant.
  3. Add black beans, kidney beans, corn, diced tomatoes, enchilada sauce, broth, chili powder, smoked paprika, cumin, salt, and pepper. Mix well.
  4. Bring to a boil then reduce heat to low. Simmer uncovered for 20–25 minutes, stirring occasionally.
  5. Once thickened, stir in 1 cup of shredded cheese until melted.
  6. Serve in bowls topped with remaining cheese and desired toppings.
