  • 1 cup fresh blueberries
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 teaspoons fresh thyme leaves

  1. Preheat oven to 190°C. Pat dry chicken breasts and season generously with salt and pepper.
  2. In a medium saucepan over medium heat, combine blueberries, balsamic vinegar, honey, and thyme leaves. Crush blueberries with a fork until jammy (about 5 minutes).
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Sear chicken on both sides until golden brown (2-3 minutes each side).
  4. Pour blueberry sauce over chicken in the skillet.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 74°C.
  6. Allow chicken to rest for 3 minutes before serving. Drizzle with additional sauce and garnish with fresh thyme if desired.
