  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili flakes
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons unsalted butter
  • 1 shallot, finely diced
  • 3 garlic cloves, minced
  • 1 ball burrata cheese
  • 2 tablespoons toasted pine nuts

Instructions

  1. Clean the wild mushrooms, dice the shallot, and mince the garlic.
  2. Boil salted water in a large pot, add tagliatelle, and cook until al dente. Drain.
  3. In a non-stick skillet over high heat, dry-fry the wild mushrooms for 6-8 minutes until they release moisture.
  4. Add olive oil, salt, pepper, smoked paprika, thyme, sage, and chili flakes to the skillet.
  5. Once mushrooms brown, pour in balsamic vinegar and add butter; let sizzle for 30 seconds before adding garlic and shallot.
  6. Toss the drained tagliatelle in the skillet to coat with the mushroom sauce.
  7. Serve topped with torn burrata and toasted pine nuts.
