  • 2 green bell peppers
  • 2 red bell peppers
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups chicken broth (warmed)
  • Cajun seasoning to taste

Instructions

  1. Finely chop the onion, bell peppers, celery, green onions, and parsley. Mince the garlic and season the chicken thighs with Cajun seasoning.
  2. In a large skillet over medium-high heat, add avocado oil and sear the chicken thighs in batches until browned (about 3-5 minutes per side). Set aside.
  3. Lower the heat to medium and melt butter in the same skillet. Whisk in flour to create a roux; cook until it reaches a medium brown color (10-15 minutes).
  4. Add chopped vegetables (onion, bell peppers, celery) to the roux and sauté for about 10 minutes until softened. Stir in minced garlic for an additional minute.
  5. Gradually whisk in warmed chicken broth until smooth and lump-free; add browning sauce if using. Return seared chicken to the skillet and let simmer on low for about 30 minutes until thickened.
  6. Remove chicken, chop into bite-sized pieces, return to pot along with parsley, adjust seasoning if needed.
